Safety doesn’t happen by accident. The guarantee of safe products to the consumer is of utmost importance when you are a large national company like most of our Client Partners. At Hill Country Bakery, we are fully committed to food safety.


From the outset, our goal has been to be an AIB Superior Bakery. In our first two inspections, we received an Excellent rating. Since 2001, every annual inspection has led to a Superior rating—the highest AIB rating. In addition, we are in the process of becoming a USDA facility, which would include daily inspections by the USDA.

To ensure food safety, Hill Country has an HACCP program, a Product Recall program, a No-Glass Policy, and we adhere to the Bio-Terrorism Act of 2002.

We have an accredited lab that runs
microbial analysis on our products, checking for total plate count, coli form, E. coli, listeria monocytogenes, and yeast and molds. In addition, all Hill Country Bakery products are metal detected prior to packaging, screening for ferrous, non-ferrous, and stainless steel metals down to 2 mm in size.

In addition, all of our employees receive food safety training each year. Food safety... it’s a natural part of who we are and what we do.
