Food Safety is One of Our Ingredients.
From the outset, our goal was to be an AIB Superior Bakery. In our first two annual inspections, we received an Excellent rating. Our goal of being rated as Superior by AIB was met in 2001 and continued through 2009. In the early part of 2010, we decided to be audited by Silliker to further test our system against their standards for compliance. Sillikers audit again established that Hill Country Bakery was an Excellent facility, their highest ranking. In our pursuit of continuous improvement we then opted to be audited against the Global Safe Food Initiative (GFSI) scheme Safe Quality Food (SQF) Level 2 thru Silliker. Due to our ceaseless commitment to food safety, on the first try we were certified and achieved an excellent rating, the highest rating.
We have an accredited lab that runs
microbial analysis on our products, checking for total plate count, coli form, yeast and molds. In addition, all Hill Country Bakery products are metal detected prior to packaging, screening for ferrous, non-ferrous down to 2 mm in size and stainless steel metals down to 2.5 mm.
In addition, all of our employees receive food safety training each year. Food safety... it’s a natural part of who we are and what we do.
